Creamed Spinach

Serves 6 - 8

 

¼ cup unsalted butter

¾ cup minced yellow onion

1 ¼ T minced garlic

2t Kosher salt

1t black pepper

1 t fresh nutmeg

¼ cup all-purpose flour

3 ½ cups heavy cream

2.25 pounds chopped frozen spinach

1/3 cup freshly grated Parmesan cheese

 

  1. In a large saucepan, melt the butter over medium –low heat. Add the onion and garlic sweat for about 10 minutes or until translucent. Stir in salt, pepper and nutmeg.
  2. Sprinkle flour over onions and cook over low heat for about 4 minutes or until there is a nutty aroma. Add heavy cream and cook over medium heat, whisking occasionally, until hot. Raise to medium-high heat and bring to a boil. Whisk for 6 to 8 minutes or until mixture thickens.
  3. Remove pan from the heat. Using a handheld immersion blender, blend the sauce for 1 – 2 minutes or until smooth.
  4. Strir in the spinach and Parmesan until well-mixed and heated through.
