Creamed Spinach
Serves 6 - 8
¼ cup unsalted butter
¾ cup minced yellow onion
1 ¼ T minced garlic
2t Kosher salt
1t black pepper
1 t fresh nutmeg
¼ cup all-purpose flour
3 ½ cups heavy cream
2.25 pounds chopped frozen spinach
1/3 cup freshly grated Parmesan cheese
- In a large saucepan, melt the butter over medium –low heat. Add the onion and garlic sweat for about 10 minutes or until translucent. Stir in salt, pepper and nutmeg.
- Sprinkle flour over onions and cook over low heat for about 4 minutes or until there is a nutty aroma. Add heavy cream and cook over medium heat, whisking occasionally, until hot. Raise to medium-high heat and bring to a boil. Whisk for 6 to 8 minutes or until mixture thickens.
- Remove pan from the heat. Using a handheld immersion blender, blend the sauce for 1 – 2 minutes or until smooth.
- Strir in the spinach and Parmesan until well-mixed and heated through.
